These yeast buns are very soft, fluffy and airy. They are delicious hot and cold, with a cup of tea or a glass of milk. Nobody will refuse such rich pastries, and even with apples!
It is not difficult to prepare these open pies and the products are the most common and affordable. By the way, from this yeast dough you can bake not only such buns with apples, but also ordinary brass pies and other baked goods. You can also take the filling to your liking, for example from canned cherries.

Ingredients:
Dough:
- flour - 500 g
- milk - 250 ml
- sugar - 180 g
- eggs - 2 pcs.
- salt - a pinch
- pressed yeast - 15 g
- butter - 50 g
Filling:
- apples - 400 g
- sugar - 80 g
- butter - 30 g
- lemon juice - 2 tbsp. l.
- ground cinnamon - 1 tsp l.
Frosting:
- egg yolk - 1 pc.
- water - 1-2 tbsp. l.
Step by step recipe
1. First, let's prepare the bun dough.
Pour 250 ml of milk into a bowl and chop 15 g of pressed yeast into it. Instead of pressed yeast, dry yeast can be used, they will need 5 g. Pour about 2 tbsp here. l. Sahara. And add a pinch of salt. Mix everything with a whisk until smooth.
Leave the dough for 10-15 minutes.
2. The dough has already stood for 10 minutes, break 2 eggs into a separate bowl and pour 130 g of sugar and a pinch of salt. Whisk everything a little.
3. Pour the ripened dough into beaten eggs with sugar. We mix everything.
4. Pour flour in parts. First, mix with a spoon, and then with your hands. Do not pour all of the flour at once, but add as needed during the kneading process. In total, I needed 500 g of flour to knead the dough. You may need more or less flour, depending on the type of flour.
5. Knead the dough for about 7-10 minutes. At the end of kneading, add 50 g of soft butter to the dough. Knead the dough again until smooth. Collect the dough into a lump and cover with cling film. We leave to come up for about 1 hour.
6. The dough came up. We crush it and set it to come up a second time.
7. While the dough comes up, prepare the filling. We take about 400 g of apples, cut them into 4 parts. Cut out the middle from the apples and cut off the skin. Cut the peeled apples into cubes.
8. Put the stewpan over medium heat and add 30 g of butter. Pour the prepared apples here.
9. So that the apples do not darken, add about 2 tbsp. lemon juice and 80 g of sugar. Mix everything and cook for 1-2 minutes.
10. At the end, add 1 tsp to the apples. ground cinnamon. Mix the apples and remove from heat.
11. The dough has already come up for the second time. We crush it again and divide it into 12 approximately identical parts.
We make buns.
Take one part of the dough and roll it into a round cake.
12. We make 4 cuts on the cake without cutting the middle. In the middle of the cake, in a slide, put about a tablespoon of apple filling.
13. We wrap the first petal around the filling, then in a circle - the second, third and fourth. We attach the edges of the fourth petal well to the base so that the bun does not come apart during baking.
14. Thus, we make all 12 buns and put them on a baking sheet, leaving a distance between them.
15. We take 1 yolk and pour about 1 tbsp. l. water. Mix everything well.
16. Lubricate all the buns with the prepared yolk. We leave them for proofing for 15 minutes.
We put everything in the oven preheated to 180 degrees. We bake for about 25 minutes.
