Found a new way of salting pink salmon

Suitable for frozen pink salmon! And for the money it comes out very profitable: it is easier to salt it yourself than to buy ready-made red fish in the store. Well, and the method is quite interesting - we will salt the fish... in a towel! I'll tell you what it is for.

Found a new way to pickle pink salmon - in a towel for 2 hours. Delicious, and cooking is easy (I share)

Ingredients:

pink salmon
salt
sugar

We will salt the fish in a dry way. For this we take only salt and sugar. I do not add any other ingredients / spices, as I consider them unnecessary - they will interrupt the taste of the fish.

In our stores they sell only frozen pink salmon, so I buy just this. We defrost the fish a little, gut it, cut off the head, tail and fins - they will be useful for the fish soup later. We cut the pink salmon into fillets, removing the ridge and large bones.

And here is the main advice right away: we cut the fish while it is still frozen. It should thaw only from above, otherwise you will not be able to cut evenly - everything will fall apart.

Mix 6 tablespoons of salt and 3 tablespoons of sugar in a bowl. And now the most interesting thing: we take a container in which we will salt the fish. Cover with a towel, spread one part of pink salmon, sprinkle with a mixture of salt and sugar, grind over fillets.

Cover the top with another towel (or the free edge of the same towel), put the second part of the fillet, which we also rub with salt and sugar.

The fish should be completely covered with towels (you need to wrap it up straight). We close the container with a lid or cling film and put it in the refrigerator. After 2 hours, lightly salted red fish will be ready. If you want it to be more salty, leave it on for 4-8 hours.

IMPORTANT! Do not be afraid that there will be a lot of salt and sugar - the fish will absorb exactly as much as needed. The degree of salinity does not depend on the amount of salt, but on how many hours to salt.

LIQUID WILL BE SEPARATED DURING THE GRINDING. The towel will absorb it, it will be all wet for you. Then shake off the remaining salt with this towel. And without a towel, pink salmon in this liquid will fall apart. It will be soft like porridge. This is the problem of frozen pink salmon and a towel solves it))
