Delicious savory pastries from the Bulgarian cuisine. Lapti (tsyrvuri) is a type of open pie stuffed with feta cheese. And the name is so because the shape of the pie resembles tsyrvuli - the traditional leather shoes of the poor (like bast shoes in Russia).
Such Bulgarian tsyrvuli will conquer your whole family. They are nourishing and aromatic. It is convenient to take them with you on the road or for a snack. This pastry will appeal to both adults and children. It contains a lot of cheese and soft yeast dough.
Preparing these sandals with filling is not difficult at all. An obligatory component of the filling is feta cheese. The rest of the filling can be changed to your liking.

Ingredients:
Dough:
- flour - 500 g
- milk - 250 ml
- egg - 1 pc.
- yeast - 10 g
- sugar - 1/2 tbsp. l.
- salt - 1/2 tsp l.
- vegetable oil - 30 ml
Filling:
- eggs - 3 pcs.
- feta cheese - 200 g
- cheese - 200 g
- sausage - 150 g
- tomato - 1 pc.
Step by step recipe
1. First, let's prepare the dough.
Pour 250 ml of warm milk into a bowl, chop 10 g of fresh yeast and add 0.5 tbsp. l. Sahara. Mix everything until sugar and yeast dissolve. We leave for 15 minutes for the yeast to start working.
2. It took 15 minutes to knead the dough.
Break 1 egg into a separate bowl and add 0.5 tsp. l. salt. Beat everything a little.
3. Add the beaten egg to the milk. We mix everything.
4. Pour flour into this liquid in several approaches. I needed about 500 g of flour for the dough. Knead the dough for about 3 minutes.
5. At the end of the batch, add 30 ml of vegetable oil. Knead the dough again until smooth. The dough should be soft, smooth and not sticky to your hands.
6. Cover the finished dough with cling film and leave to rise for about 1 hour.
7. While the dough is coming up, prepare the filling.
200 g three cheese on a coarse grater.
Break 2-3 eggs into a bowl. Beat them a little.
8. Pour grated cheese into eggs and mix everything.
9. 200 g of cheese three on a coarse grater.
First cut 150 g of sausage into circles, and then cut the circles into small pieces.
10. Cut the tomato into 4 pieces and cut into slices.
11. The dough has already come. We divide it into 4 approximately equal parts. Take a piece of dough and roll it into a rectangle.
Also, this dough is great for making pizzas or pies.
12. Use our hands to shape the dough into a bast shoe. We make a side on the sides so that the filling does not flow out later.
Put the dough buns on a baking sheet covered with parchment paper and once again give them the desired shape.
Leave the dough in this form for 10-15 minutes for proofing.
13. The dough came up. Fill the middle of each bast with prepared cheese and egg. Put the sliced sausage on top. We also lay out the tomato slices. I cooked two bast shoes with tomatoes, and two without them.
14. Sprinkle everything on top with grated cheese.
15. We put everything in the oven preheated to 180 degrees. Bake for about 25-30 minutes, until tender.
We serve the finished dish hot.
