Today I want to invite you to prepare a very tasty and beautifully decorated puff chicken salad.
The salad is light and satisfying at the same time. Perfectly decorate any festive table!

First, marinate the red onion. Instead of red onions, you can use white onions if you wish.
- finely chop the onion and cover with pickled cucumber marinade
Finely chop

- chicken meat, I have a smoked chicken fillet roll. You can also prepare a salad with chicken pastrom. or boiled chicken.
Divide 4 boiled eggs into whites and yolks.
Grate on a coarse grater

Rub on a fine grater

- salt the marinade with the pickled onion, and squeeze the onion
- squeeze and salt the excess marinade from the pickled cucumbers
Let's form a salad
- install a split ring and an acetate film on the plate
- with the first layer we spread 2/3 of the total volume of chicken meat
To prevent the layer from falling apart, I spread out some of the chicken meat and cover it with a fine mesh of mayonnaise. I spread the second part, and also cover it with a fine mesh of mayonnaise.
- spread the mayonnaise with a spoon, lightly tamp the layer
- evenly spread chopped dill on the meat layer
- cover the dill with a fine mesh of mayonnaise
- evenly spread the red onion on the mayonnaise mesh
- cover the onion with a fine mesh of mayonnaise
- evenly spread the carrots on the mayonnaise mesh, cover with a mayonnaise mesh, level the mayonnaise
- evenly spread the remaining chicken meat on the carrots, cover with a net of mayonnaise, level the mayonnaise
- evenly spread the pickled cucumbers on the chicken meat, cover with a net of mayonnaise, level the mayonnaise

Put a circle with a diameter of 14.5 cm in the center of the salad and spread the grated carrots in a thin layer along the edge of the salad.
We remove the circle and fill this space with grated yolk.
We remove the salad in the refrigerator and brew for 2-3 hours. You can prepare a salad in the evening and refrigerate overnight.
Free the salad from the mold and the acetate film before serving.
- grease the side of the salad with a thin layer of mayonnaise and cover with a thin layer of carrots grated on a fine grater. It is convenient to do this with a fork.
If your carrots are very juicy, then you can squeeze excess juice from the carrots before decorating.
Salad dressing
I decorate the salad with roses made from fresh carrots. To do this, clean the carrots and cut them into thin slices, the thinner you cut the carrots, the better.
- dissolve 1 teaspoonful of salt in 1 liter of pure water
- put chopped carrot slices in salt water, and leave on the table for 15-20 minutes
When carrots are soaked in salt water, they become soft and pliable and can be easily rolled into a tube.
Carrot roses
- dry the carrot mugs with paper napkins
- form a strip from circles and twist the strip into a tube
- we fix the tube from below with skewers at a distance of at least 1 cm from the edge
- unfold the tube on top, form rose petals. Cut the protruding skewers with scissors or tweezers
Thus, we form 3 roses and decorate the salad with roses on top.
For beauty and juiciness, add parsley leaves and small dill feathers.
