It has long been proven that breakfast is the most important meal of the day. What is the most popular dish for him? Each national cuisine has its own “favorite” on the menu. For example, breakfast in an English family includes scrambled eggs and fried bacon, in France - crispy baguettes and tender croissants. In Russian, Ukrainian and Belarusian cuisine, these are cheesecakes, yes, from cottage cheese and raisins. They will never go out of style and the menus of many cafes and restaurants are a must-have for breakfast.

Ingredients:
Cottage cheese (fat content 9%) - 350 g
Chicken egg (selected category) - 1 pc.
Raisins b / c - 1 handful
Orange (or vanilla) sugar - 1 tsp
Sugar to taste
Rice flour - 4 tablespoons (+ for rolling curd cakes)
Vegetable oil - 2 tablespoons
Step by step recipe:
Prepare your ingredients. They are almost the same as for making traditional cheesecakes, the only difference is in flour - this recipe uses gluten-free rice.
If the raisins are dry, cover them with hot water and leave for 10 minutes to soften. Then drain it, and dry the dried fruit.
The amount of sugar - to taste, and depends on what to serve the finished dish with: if with sour cream, then you can add more (2-3 tablespoons), and if with jam, then 1 tablespoon will be enough.
For flavor, it's best to use orange or vanilla sugar.
Place the curd in a deep bowl. Add egg, granulated sugar and orange sugar (or vanilla). Mash the ingredients with a potato grinder until smooth.
Add rice flour to the curd mass. Knead it again.
The amount of flour is designed for dry cottage cheese, but if it is wet, then more of it may be needed.
Finally, add the raisins and stir in with a spoon.
Shape the pancakes to the desired size.
Dip each curd in rice flour.
Heat vegetable oil in a skillet over medium heat and fry the pancakes on both sides until golden brown.
Put the finished products first on a plate covered with a paper towel and then on a serving dish.
Cheesecakes with rice flour are the same in consistency as with wheat flour, but the crust is crisper.

If you don't have rice flour or need to buy a whole bag, make it yourself. This requires dry rice (for example, Krasnodar round rice) and a coffee grinder. Grind the cereal to a flour state, and then sift through a fine sieve to get rid of unmilled coarse particles. For this recipe, I needed 6 tablespoons of Krasnodar rice.
