The chops are not simple, but my aunt Nina's trademark, she only cooks chops like that. At first glance, nothing unusual, but thanks to one chip, the chops are soft and juicy, even from beef.
Recipe:
fillet -500 gr
milk -200 ml
salt -1/2 tsp
black pepper - to taste
egg - 1-2 pieces
flour - for breading (or bread crumbs)
For rice with vegetables:
rice -300 gr
carrots -1 pc
green peas -150 gr
butter -30 gr
water -500 ml
salt -1 tsp
black pepper - to taste
COOKING METHOD
And so, we take meat fillet 500 gr, I have pork today, you can take beef. We beat the meat well with a hammer for beating or with the back of a knife. Now salt on both sides, for 0.5 kg of fillet, I add half a tsp. salt, black pepper.
Now put the meat in a bowl and fill it with 200 ml of milk, close it and put it in the refrigerator for at least 1 hour, preferably in the refrigerator overnight.
There is a chip in milk, the meat is saturated with milk and thanks to this, the finished chops will be much juicier.
While the meat is saturated with milk, prepare a side dish. Today I have rice with vegetables, this is how I cook. Cut the carrots into cubes. Pour vegetable oil into a frying pan, put carrots and fry for a couple of minutes, now add frozen green peas, mix and remove from heat.
We wash 300 grams of rice, I can have any steamed today.
We take a suitable baking sheet from my internal dimensions
31 cm by 23 cm, grease with butter.
Put carrots with peas, put washed rice, add half tsp. l. salt, black pepper to taste, mix. put butter grams 30
Pour in 500 ml of water, cover with foil and put in the oven, cook at 200 degrees for 30 minutes, then turn off the oven and do not remove it for another 10 minutes.
1 hour has passed, we take out the meat from the milk, it is not necessary to dry it.
Break the egg into a bowl, add a pinch of salt and black pepper, beat.
Now we roll the meat in flour, then in an egg and again in flour, you don't need to roll it in flour a second time, but fry it in an egg. Or you can roll in bread crumbs.
Pour vegetable oil into a frying pan, heat up, put the meat and fry on both sides until golden brown and cooked under a lid over medium heat.
Remove from the pan and serve with a side dish, adding your favorite sauce.
The meat is soft, juicy and very tasty.
