We love baked goods, which is why I bake a lot. I have many dough recipes. And recently I "found" one more - well, very simple. Without dough. And the dough is delicious! Most often I make different types of buns. I change the fillings. We love the cheesecakes stuffed with fried onions! HOW TO COOK:
First, I must sift the flour. I sift 2-3 times. So the dough is fluffier. I usually need 430-450 g flour. But, of course, everything depends on the moisture content of the flour. You may need a little less (about 400 g), or, conversely, a little more (about 500 g).
I add fast-acting yeast (dry) to the flour. I choose those that are added directly to the flour. In the video, I showed which yeast I use most often. There is also a recipe for cheesecakes with cottage cheese from this dough:
Beat the egg with a fork and add to the flour. Here - milk with salt and sugar. I warm up the milk a little (to keep it warm, NOT hot!) And dilute salt and sugar in it.
I begin to knead the dough. It turns out to be very "cool". This is fine. Gradually add vegetable oil to the dough in parts.
And I continue to knead. The dough becomes softer and softer with each addition of butter. And it does not stick to your hands at all. I usually knead for 8-10 minutes.
I collect the finished dough in a ball, put it in a bowl, cover it with a towel and leave it there for 40 minutes. Then I knead the dough and again leave it to rise in a warm place for another 40-50 minutes.
And that's it! You can make buns or something else.
For the test:
• Flour - 450-500 g
• Fast-acting yeast - 7 g
• Milk (warm) - 200 ml
• Egg - 1 pc.
• Salt - 0.5 tsp.
• Sugar - 2 tbsp.
• Vegetable oil - 3 tbsp.
Today I have cheesecakes with cottage cheese. I divide the dough into 8 equal parts, round each piece to make a ball. And put it on a baking sheet. I only have 6 pieces (the buns need space so they don't stick together). Scroll 👇
While I am preparing the filling, the balls will slightly increase in volume. Better to cover them with a towel.
For the filling, I take cottage cheese, grind it with a blender or grind it through a sieve, add egg yolk, salt, sugar, vanilla sugar, a little starch and sour cream. I stir it.
I make a depression in each ball with a glass. And I spread the filling.
I leave the cheesecakes on the table for another 10 minutes. Then I grease with an egg beaten with a spoonful of milk and put in an oven preheated to 180 degrees. I bake for 15 minutes. Take a look in your oven. The buns will brown like this:
For filling:
• Cottage cheese - 400 g
• Egg yolk - 1 pc.
• Vanilla sugar - 1 pack. (8 g)
• Starch (potato or corn) - 1 tbsp.
• Sour cream (any fat content, I have 20%) - 2 tbsp.
• Sugar - 2 tbsp.
• Salt - a pinch
