The recipe for the famous salad "Olivier" without adding sausage and meat. An original recipe with a twist.
Could Lucien Olivier, creating a recipe for his famous salad, know that it would become a favorite for the whole country and that not a single New Year's Eve of a Soviet person would do without it? Since then, the recipe has undergone many changes. And each housewife prepares it in her own way, someone adds a fresh apple, someone a combination of fresh and pickled cucumbers, someone cannot imagine this salad without sausage or baked meat. I have my own recipe, according to which I have been preparing "Olivier" for the New Year holidays for several years now.
I always bake potatoes and carrots for such salads, it tastes better. I wrap each root vegetable in foil and put it in the oven for 1.5 - 2 hours. Vegetables usually cool overnight in the same foil.
I try to cut eggs, potatoes and carrots into identical cubes. I don’t add fresh cucumber, but I’m sure to add salted cucumber, I cut it into cubes in the same way, but a little finer than vegetables. I definitely add a jar of delicious canned peas.
I don’t add onions, it bothers me in this salad.
But instead of boiled sausage and meat, I add fried mushrooms. Yes, you will be surprised, but just like that. I cut the mushrooms into cubes and fry in vegetable oil with the addition of salt and pepper.
I add ready-made mushrooms to the salad and salt a little. For dressing, I use only mayonnaise, but only before serving.
Add some dill or green onions if you like.
Serving such a salad, as you yourself understand, is fashionable as you like. This year I decided to arrange it in a ring shape using a 19 cm split baking dish and an 8 cm diameter culinary ring.

- Champignon mushrooms 200 grams
- Canned peas 1 can
- Mayonnaise 2-3 tablespoons
