Ingredients:

pumpkin
onion
carrot
garlic
tomato paste
mayonnaise
vegetable oil
salt
spices

Attention! I indicate the ingredients for 3 kg of pumpkin. If this is a lot for you, then just reduce the proportions.

I have adapted to making such caviar in a slow cooker, but it is also possible in a saucepan on the stove, the cooking principle is the same.

So, cut 3 kg of pumpkin pulp into small cubes and put in a multicooker bowl. Put there finely chopped or minced onions (2 pcs), one medium grated carrot.

Add half a glass of vegetable oil, a head of chopped garlic, salt to taste. I put about 1 tablespoon of salt. Sugar is not needed, as pumpkin is already sweetish. But if there is not enough sugar for your taste, then add.

Then put 8 tablespoons of mayonnaise and 6-7 tablespoons of tomato paste. If desired, you can add spices or herbs, but I do not put it.

I set the "Extinguishing" mode for 1-1.5 hours. If doing in a saucepan, simmer about the same amount over low heat. Add some water if necessary.

Then grind everything with a blender or pass it through a meat grinder - and delicious pumpkin caviar is ready. Bon appetit, my dears!
