It's 100 times tastier than store-bought ham. A simple yet delicious recipe for homemade chicken ham.

Recipe:
chicken fillet - 1kg
table salt -10g
nitrite salt -5 g
garlic -1 tsp
black pepper - to taste
polyamide casing (caliber 60mm) - 80 cm
COOKING METHOD
For such purposes, I buy the whole chicken, you can buy separately the thighs and breast, all at your discretion.
Separate the fillet, breast, from the thighs from the chicken. I do not peel the peel with it, the ham turns out to be juicier, you can remove everything at your discretion.
Cut the fillet into pieces.
Put it in a bowl.
We measure out the salt required for 1 kg of meat 15 grams of salt, of which 1/3 is nitrite salt. I need nitrite salt so that the finished ham will have exactly the real taste of ham.
And so I put 1 kg of meat, 10 grams of common salt and 5 grams of nitrite salt. I mix everything well with my hands so that the salt is evenly distributed. I close it end-to-end and cover it with a film, or you can just put it in a bag and put it in the refrigerator for 3 days.
The temperature should be between 0 and 5 degrees.
After three days we take it out of the refrigerator, mix and add spices, I add only dried garlic 1 tsp. for 1 kg of meat and black pepper and mix everything well.
Now we need a polyamide casing for a sausage, I have a caliber of 60 mm.
Cut off the desired length, tie the edge, try to fill the loaf tightly so that there is no air, tie it. I get 3 of these small loaves.
We take the multicooker bowl, put the loaves and fill it with water.
We install the bowl in the multicooker, close the lid. We select the multi-cook mode and turn it on, now using the Master Chef Light function we set the temperature 50 degrees, time 3 hours, after 3 hours, you need to add the temperature to 80 degrees and cook another 1.5 hours.
As a result, you need to cook the ham for 3 hours at 50 degrees and 1.5 hours at 80 degrees.
Now we take out the loaves, let them cool at room temperature, then put them in the refrigerator until they cool completely.
Now we take it out of the shell and cut it.
