Ingredients:

beef on the bone -1.5 kg
pork - legs 4 pcs +2 shanks
chicken - 2 legs (you can take chicken legs)
onions - 2 pieces
carrots -1 pc
garlic 1-1.5 heads
salt
Bay leaf
black peppercorns

Note: I cook a lot of jellied meat. If you need less, reduce the proportions.

So, we take 3 types of meat: pork, beef and chicken. If you do not eat pork, you can cook without it, only from beef and chicken, it will also be delicious.

Put the meat in a saucepan, fill it with cold water. As soon as scale appears - drain all the water, rinse the pan, rinse the meat from scale and fill it with cold water again. Pour water 3 cm above the meat.

As soon as it boils, remove the scale, put 2 whole onions and one carrot. Then we reduce the heat to the minimum and cook under the lid for 2-2.5 hours.

We remove the chicken, and cook the pork and beef for another three to four hours. An hour before cooking, salt to taste, add bay leaf and black peppercorns.

Divide the meat into fibers by hand and put it in containers. Fill with strained broth (remove fat from above with a spoon), add garlic finely chopped with a knife. Leave it to cool at room temperature, then put it in the refrigerator until it cools completely.
