Dessert "Baden Baden". Falls in love with everyone from the first spoon. Cooking is easier than you can imagine, if you have not pushed through yet, then rather correct the situation and urgently cook this yummy.
This year I decided to cook this dessert instead of the Napoleon cake.

Recipe:
puff pastry without yeast - 1 pack (450g)
strawberry -250g
For the cream:
egg yolks - 6 pcs.
sugar -200g
milk -400ml
vanilla sugar "Haas" -1 pack
corn starch "Haas" -2 tbsp. (30g)
cream 33% -200ml
citric acid -1 / 2 tsp.
For ganache:
milk chocolate -250g
cream 20% -100ml
COOKING METHOD
We defrost the puff pastry 400 grams without yeast, roll it out a little, but not much, about 25 cm by 25 cm, now we cut it into squares about 1 cm by 1 cm in size.
Put in the oven and bake until tender at 180 degrees for 25 minutes.
Pour 200 grams of sugar into a saucepan, add vanilla sugar,
add corn starch 2 tablespoons by weight it is 30 grams, mixable. Pour in 400 ml of milk. 6 eggs are divided into whites and yolks, we do not need whites. By the way, proteins can be frozen in the freezer, when you need to take them out and defrost them, for example, for making meringues, they do not lose their properties.
We put on fire and constantly stirring, cook over medium heat until thickened, remove from heat.
Now we close it with a foil in a joint and let it cool.
Measure out 200 grams of whipping cream, fat content not less than 33%, beat with a mixer at medium speed until soft peaks.
Punch the cooled custard mass with a mixer and add whipped cream to it in 2-3 doses. I love desserts with sourness, so I also add ½ tsp. citric acid, I break through again with a mixer.

We disassemble the puff cookies into plates and put them in a suitable container, put the cream on top and level them, put them in the refrigerator for 30-40 minutes.
Now let's melt the chocolate.
Put 250 grams of milk chocolate in a bowl, pour in 100 ml of cream with 20% fat. We put in a water bath, stirring, bring to homogeneity and remove from heat, let cool to room temperature.
We take out the dessert from the fridge and fill it with chocolate, put it in the fridge for another 30 minutes.
Put strawberries on top, you can cook in portions in bowls.
It turns out very tasty, I recommend it.
