Ingredients: Base, yolk, butter 🧈, flour, salt and soda, Filling, any berries (here, black currants) ⠀, smooth curd or curd cream ⠀, sugar, apple, soufflé, protein, sugar
Cooking method:
Preparing the base. I grind all the ingredients one by one. I get loose crumb.
I set aside a large handful separately. I put the rest on the bottom of the oiled mold.
I form a layer with a side up to 2 cm small.
Sprinkle berries on the base in a thin layer. Can be frozen. If the berries are sour, sprinkle with a couple of tablespoons of sugar.
I rub the apples on a coarse grater. I rub the cottage cheese with a fork. I add apples and sugar. I stir it.
Cover the berries evenly with the mixture, crushing them slightly with a fork.
For the soufflé, beat the whites. Gradually add sugar in three portions. Beat until firm peaks.
Gently apply to the curd mixture. I distribute with a silicone spatula.
Sprinkle on top with crumbs from the base.
I bake in the oven for half an hour at a temperature of 185 degrees Celsius until golden brown. ⠀
