Mannik with pumpkin on kefir

A healthy and nutritious manna with pumpkin will please even children who do not really like to eat such a colorful vegetable boiled or baked. To create a dessert, you will have to be patient, as the dough for it takes about 1 hour. This is due to the fact that semolina is included in the composition, and it needs to absorb liquid in order to become airy, and not settle to the bottom of the baking in an unbaked layer.

Do not forget that the crushed pumpkin mass is very juicy, so either soak it for 10-15 minutes, and then drain the juice, or increase the amount of wheat flour when adding to the dough. Use a baking powder to add puffiness and porosity to the cake, rather than soda slaked with vinegar, so that the manna does not acquire a bitter soda aftertaste.

Ingredients:

Kefir - 1 tbsp.

Wheat flour - 1 tbsp.

Pumpkin - 200 g

Sugar - 110 g

Salt - 4 pinches

Semolina - 1 tbsp.

Baking powder - 1 tsp

Chicken eggs - 2 pcs.

Vegetable oil - 50 ml

Flavoring to taste

Prepare the food you need.

Start making the dough in advance. Combine kefir of any fat content with semolina in a deep container. Stir gently and let sit for 1 hour at room temperature.

Be sure to taste kefir, if it is sour, then you will have to add sugar a little more than the specified norm.

Peel a slice of pumpkin, rinse and grate with fine meshes. After 1 hour, pour the pumpkin mass into a container with kefir. If it is very juicy, then first squeeze the juice from the pulp.

Add granulated sugar there, beat in two chicken eggs, add salt. Stir gently in a circular motion.

Pour in vegetable oil and add baking powder. Butter can be replaced with ghee or odorless melted lard. Add a few drops of fragrance if using, such as citrus.

Sift premium wheat flour into a bowl. Gently add it to the mass, knead the pumpkin dough. Preheat oven to 170-180 degrees.

Grease the mold with vegetable oil and pour the prepared manna dough into it (the recipe uses a container with a diameter of 24 cm). Remember, the wider it is, the lower the baked goods will be.

Place in oven and bake for about 45-50 minutes without increasing heat. It should be medium all the time so that the semolina cake is baked inside.
