Cut off fat and pipes from the hearts. Chop and rinse in cold running water. Throw in a colander, let the water drain. Fry the hearts, lightly adding salt, in a little vegetable oil for 2-3 minutes. Fry the hearts in batches, in a pan they should be in one layer. Put the hearts in a salad bowl, add Korean-style carrots, chopped pickled mushrooms, green onions and parsley. Season the salad with French mustard and sour cream. We mix.

To decorate the salad, flatten the top of the salad, in the center put a heart made of protein grated on a fine grater (we use the yolk in another salad).
