Today I have one more on the menu holiday salad. In general, I want to show not even the salad, but the way of serving, I think that the salads are already enough for you.
PREPARATION OF PRODUCTS
You will need meat or vegetable broth, or just water. I have the chicken breast broth that I cooked for this salad.
You calculate the amount of gelatin based on the amount of broth (40 g of gelatin per 1 liter of broth).
I fill the gelatin with additional broth at a rate of 1 to 5. I take 16 g of gelatin and add 80 g of additional broth, stir everything and leave to swell.
Put a pot of water on the stove and let it come to a boil.
Heat the broth until warm, add the swollen gelatin to it and mix well.
Prepare a bowl of cold water better even if it contains ice.
PREPARATION OF TOMATOES
It is advisable to use large tomatoes. I make a cruciform incision on each with a sharp knife.
I dip the tomatoes in a pot of boiling water and leave them for 1 minute. Do not put everything at once, otherwise the water will get very cold.
After 3 minutes, I take them out and immediately transfer them to cold water. Peel the tomatoes.
Now you need to remove the insides. With large tomatoes, all these manipulations can be done much easier.
I put the finished tomatoes down with the hole and blot them a little with a napkin on top.
They need to be removed in the cold for ten minutes, you can put them in the freezer for five minutes.
After that, they need to be bathed in a cooled broth with gelatin.
The broth should also be at room temperature by this time.
This operation is not necessary, but my broth is salted and it will give a pleasant taste to the tomatoes. In addition, the gelatinous coating will give the tomatoes a beautiful shine, and they will become stronger.
I put the tomatoes in the freezer for 5 minutes.
SALAD COOKING AND STUFFING
For stuffing "seniors" I make a capital crab salad.
The composition is as follows: crab sticks or crab meat, chicken breast, boiled eggs, boiled rice and boiled carrots. Salt a little, pepper and season with mayonnaise.
You can do any salad, it is only desirable that it be pasty, that is, not crumbly.
When the tomatoes have cooled and the gelatin has frozen, I begin to stuff them.
Gelatin products are always stored much better, which is very important on holidays.
Stuffed tomatoes pour broth on top to close the salad.
Now they need to be put in the refrigerator again or in the freezer for five minutes. When the tomatoes immediately froze on top of the jelly, turn over and gently grease on top.
For such an amount (as I have 6 pieces), 200 g of broth is enough for you.
