Cooking method:
Finely chop the onion and garlic, fry in oil. Add finely chopped pork, stir and fry.
For the sauce, cut the mushrooms into slices, fry in a saucepan in butter, sprinkle with flour. Pour in a little water, soy sauce, salt and simmer for 15-20 minutes, stirring occasionally.
Add eggplant and pepper to the meat. Pour in soy sauce, wine, add ginger, simmer until tender.
Boil the noodles. In order for the noodles to be cooked with high quality, not to stick together, to taste al dente, as if they are a little undercooked, they should be prepared as follows. Pour hot water, brought to a boil, into a saucepan with a portion of rice noodles. The temperature of such water should be about 80 degrees (but not the boiling point - 90 degrees. WITH). Then cover the pan with a lid and let stand for ten minutes. Now you can just drain the water
Put the noodles on a plate, top with pork with vegetables, pour over the sauce.
