Here are collected four very tasty cakes at once, which are prepared without baking and without gelatin. They are beautiful and original. This is a dessert with Savoyardi, very similar to tiramisu, a delicate Raffaello cake, an Orange dessert cake without baking, and a cake without baking from cookies with sour cream. Such desserts are perfect both for every day and for a festive table. Keep a selection of these simple and tender desserts without baking. It will definitely come in handy!

Dessert with Savoyardi without baking

Ingredients:

  • milk - 1 l
  • Savoyardi cookies - 300 g
  • sugar - 1 glass
  • cottage cheese - 200 g
  • butter - 50 g
  • corn starch - 2 tbsp. l. with a slide
  • flour - 2 tbsp. l. with a slide
  • yolk - 1 pc.
  • cocoa - 20-30 g
  • vanilla sugar - 10 g

Syrup:

  • water - 250 ml
  • milk - 100 ml
  • instant coffee - 1 tbsp. l.
  • sugar - 1 tbsp. l.

Step-by-step cooking recipe:

  1. First, let's prepare the cream. Pour milk into a saucepan, add sugar, 2 tbsp. l. flour and 2 tbsp. starch. We also break 1 yolk here, we do not need the protein. We put the pan on the fire. Cook the cream over medium heat. Stir constantly with a whisk so that the cream does not burn to the bottom. When the cream thickens and begins to boil, cook for another 1-2 minutes and remove from heat.
  2. Add 50 g of butter and vanilla sugar to the hot cream. Mix everything and leave to cool for 10-15 minutes. Stir periodically so that a crust does not form on top.
  3. The cream has already cooled down a little, put 200 g of cottage cheese in a bowl and grind it with an immersion blender. Put the prepared cottage cheese to the already slightly cooled cream and mix everything.
  4. Preparing the biscuit soak syrup. Pour 1 tbsp into a bowl. l. instant coffee, 1 tbsp. l. sugar and pour 250 g of boiling water and mix everything. Here, for coffee, pour 100 ml of milk and mix.
  5. Dip the Savoyardi cookies in the prepared coffee and immediately put them in the mold. Using this method, we lay the entire bottom of the form. The diameter of my mold is 28 cm, and the height is 5. Pour half of the cream onto the cookies and level it with a spoon. The next layer is again to lay out the Savoyardi cookies soaked in coffee. Pour out the remaining half of the cream and distribute evenly. Put the cake in the refrigerator to freeze for at least 4 hours.
  6. To decorate the cake, cut paper strips 2 cm wide. Put the prepared strips on the cake. Sprinkle with cocoa on top so that the gaps are completely covered with cocoa. Carefully remove the paper strips. We put new paper strips at an angle to the previous ones. Sprinkle with cocoa again, but now not as abundantly as the first time. Carefully remove the strips.
  7. Cut the cake and serve. The cake without baking turned out to be very tasty and tender.

Rafaello cake

Ingredients:

  • milk - 1 l
  • shortbread cookies - 500 g
  • sugar - 1 glass
  • coconut flakes - 100 g
  • butter - 200 g
  • egg yolks - 2 pcs.
  • flour - 3 tbsp. l.
  • starch - 3 tbsp. l.
  • vanilla sugar - 8 g

Step-by-step cooking recipe:

  1. First, let's make the custard. Pour 300 ml from a liter of milk, and pour the remaining 700 ml of milk into a saucepan and put on the stove.
  2. While the milk is boiling, mix flour, vanilla sugar, granulated sugar, starch and 2 yolks in a separate container. Stir as much as possible and add the remaining 300 ml of milk. Mix everything well so that there are no lumps.
  3. The resulting mixture is gradually poured into boiled milk, while stirring continuously. Boil the cream over low heat until thickened, while the cream should practically boil. Cool the finished cream to room temperature.
  4. Beat the soft butter until white. We gradually add the already cooled cream to it.
  5. We collect the cake in a form covered with parchment paper. The size of my form is 23 * 23 cm. Put the cookies in one layer and grease it with the prepared cream. Then we put the cookies again and continue this way until everything is over. I got 3 layers of cookies. Put the cream on the last layer.
  6. Sprinkle the cream on top with plenty of coconut, it will need about 100 g. Let the cake infuse for about 2 hours in the refrigerator and serve.

Orange cake without baking

Ingredients:

(for a mold with a volume of 1.5 l)

  • orange juice - 500 ml
  • corn starch - 45 g (4 tbsp. l. with a slide)
  • sugar - 50 g (3 tbsp. l. with a slide)
  • milk - 1 l
  • sugar - 170 g (9 tbsp. l. with a slide)
  • semolina - 140 g (9 tbsp. l. with a slide)
  • cocoa - 2 tbsp. l.
  • coconut flakes - 2 tbsp. l.
  • butter - 25 g (1 tbsp. l.)
  • vanilla sugar - 10 g

Step-by-step cooking recipe:

  1. First, let's prepare the orange layer. Pour orange juice into a saucepan, add sugar and cornstarch. Mix everything with a whisk until smooth and put on the stove. Cook the orange pudding, stirring constantly until it thickens and boils. When the mixture boils, cook for another 1 minute and remove from heat. Pour the hot orange mixture into a mold. I took a 1.5 L silicone cupcake maker, but you can also take a glass form or even a bowl. Leave to cool at room temperature.
  2. While the orange layer hardens, prepare the next milky layer. Pour a liter of cold milk into a saucepan, pour 140 g semolina, sugar, 10 g vanilla sugar and 2 tbsp. with a slide of coconut flakes. Mix everything with a whisk and set it to cook. Cook the mixture over low heat, while constantly stirring, so that there are no lumps and the mixture does not burn from the bottom and sides. Cook until it thickens and boils.
  3. When the mixture boils, cook it for another 1 minute and remove from heat. Add 25 g of butter to this and mix well. Without waiting for cooling, pour about half of this mass onto the orange layer. We carefully level everything with a spoon.
  4. Add 2 tablespoons to the pan with the remaining cream. cocoa. Cocoa must be sieved so that no lumps appear. Mix everything well.
    Put the chocolate mixture on a white layer and gently level it with a spoon. Let the cake cool to room temperature, and then cover everything with cling film and put in the refrigerator. The cake is ready in about 3-4 hours.
  5. We take out the cake from the refrigerator. Carefully go along the edge with a knife, detaching it from the form. Cover with a large dish and turn over. Carefully remove the shape from the cake. The cake is ready, you can serve it on the table.

No baked cake and no gelatin

Ingredients:

  • sour cream 25% - 400 ml
  • Savoyardi cookies - 300 g
  • shortbread cookies - 320 g
  • lemon juice - 100 ml (1.5 lemons)
  1. Let's make some cream for the cake. Squeeze 100 ml of lemon juice from the lemon. Pour 400 ml of sour cream with a fat content of 25% into a bowl and add one can of unboiled condensed milk. Mix everything with a whisk.
  2. Gradually pour 100 ml of lemon juice into this mass, while constantly stirring. Sour cream will begin to thicken from lemon juice, and after a while it will thicken even more.
  3. Cover the form in which we will fold the cake with cling film. This is done to make it easier to reach. The size of my form is 25 * 11 cm.
    Put some cream on the bottom of the mold. Put a layer of chocolate shortbread on it. When laying out the cookies, try not to touch the sides of the form, so that the cake turns out with beautiful white sides.
  4. Put the cream back on. Lay out the cookie layer. If the whole cookie does not fit, then cut it to size with a knife. This is how we fold the whole cake. Cover everything on top with cream. I got 5 layers of cookies.
    We cover the form with cling film and put in the refrigerator to infuse for 4 hours, or better for the whole night.
  5. The cake is frozen. Remove the cling film and turn it over onto a dish. Carefully remove the film from the cake. Smooth the sides of the cake with a knife.
  6. One cookie with crumbling hands. We decorate the cake on top with the resulting crumb. Serve the finished cake.
