Cooking method:
Cut the bread into small pieces and cover with warm milk. Let the bread swell and stir with your hands.
Chop the onion finely and sauté over a couple of tablespoons of olive oil.
Chop the liver finely and add to the onion. Season to taste. Add capers and finely chopped anchovies to the liver, fry until the liver is tender.
Remove the liver from heat and add the soaked bread, chopped parsley, one egg and one yolk. Stir well. If the mixture is too thin, add bread crumbs.
In a saucepan, melt the butter along with the thyme leaves.
Stuff the turkey. It is better to tie the legs together with the tail, otherwise they will spread out when baking, and put the wings under the back of the bird.
Rub the turkey with salt and pepper and brush with melted thyme butter. We send the turkey to an oven preheated to 180 ° to brown for 50 - 60 minutes.
After an hour, tightly wrap the turkey in foil and send it back to the oven for 1 hour - 1 hour 15 minutes (I kept it for 1.5 hours).
Then open the foil and brown the bird for about 20-30 minutes. Pour the juice from the finished turkey into a saucepan, and wrap the bird tightly with foil and leave it to stand for at least 40 minutes.
Add red wine to the juice. We put on low heat and boil the liquid in half. (I mixed wine and port and added bay leaves). When the sauce is ready, you can add a little butter, but that's up to you. Season the sauce to taste.
While the turkey is baking, peel the Brussels sprouts, drizzle with olive oil and season to taste. Stir well with your hands, place a couple of butter slices on top and bake with the turkey until tender.
Put cranberries and 80 g of sugar on low heat. Cook for about 15 minutes while kneading the cranberries with a spoon.
Cut off the top and core from the apples. Stuff the apples with cranberries, sprinkle with cinnamon and sugar, bake at 180 ° for 15-20 minutes.
