For the New Year's table, I always prepare Caesar salad (this is apart from Olivier and Herring under a fur coat, of course). But this year she decided to change the traditions a little and instead of the classic "Caesar" she served a salad with squid on the festive table. This salad has similarities with "Caesar", so my son immediately gave it the name "Caesar with squid". Highly recommend. Yummy! Everyone appreciated!
Of course, the most important thing here is to properly cook the squid and prepare the sauce.
I recently talked about how to prepare squid for salads. This method is used by my husband. Squids are very tender and tasty! Look here:
For the sauce I take sesame seeds, pine nuts, olive oil, a little water, any pickled cheese, tsp. vinegar and a little mustard. I grind all this in a blender.
And you get a delicious sauce, which is suitable, by the way, for many salads. Pine nuts can be substituted for cashews or even walnuts. I talked about this sauce in detail here:
Sauce recipe:
• Sesame seeds - 1-2 tsp.
• Pine nuts - 1 tbsp.
• Vinegar 6% - 1 tsp.
• Olive oil - 3 tablespoons.
• Clean water - 2 tbsp.
• Pickled cheese (I have feta cheese) - 25 g
• Mustard - 1/3 tsp.
• Salt
I tear two types of salad into a bowl with my hands (I have an iceberg and a grunge). You can take Chinese cabbage instead of salads. But it is tastier with lettuce leaves.
I add chopped tomatoes, some onions (I have leeks) and greens. Salt to taste and season with olive oil (you don't need much, 1 tablespoon is enough)
I stir the vegetables and put them on a large platter in which I will serve the salad.
I season the boiled and chopped squid with the prepared sauce.
And I put them on top of the vegetables. and that's it! Delicious Caesar salad with squid is ready! Try it! This is delicious!
For the salad:
• Squids - 2 pcs.
• Lettuce leaves (I have an iceberg and grunge)
• Tomatoes - 2-3 pcs.
• Leek
• Greenery
• Salt
• Olive oil - 1 tbsp.
