Cooking method:
Prepare the dough, mix softened butter with flour and knead the butter dough, roll it into a rectangular layer and set aside.
Prepare the dough, beat the yolk with water and vinegar, pour the mixture into flour, knead the dough, wrap it in plastic and refrigerate for 15 minutes.
Then roll this dough into a layer slightly larger than the previous one, put the butter dough on it and roll it several times, you can divide it into two parts, roll it out again, repeat 3 times.
Cut out the circles with a shape or glass, place on a baking sheet covered with parchment, sprinkle with water, pierce with a fork and bake in an oven preheated to 210'C until golden brown.
Prepare the cream: add yolks slightly whipped with sugar to the milk, add starch, bring the mixture to a boil, add vanilla sugar, stirring, bring to a thick state, then cool and add whites whipped into a strong foam, mix until smooth states.
Apply cream to half of the cooled circles, cover with a second layer and reapply the cream, sprinkle with jewelry or powdered sugar.
