For pickling, I often use salmon or trout. Both pink salmon and the other will do. We just have this one more available for purchasing the proper quality. It turns out very tasty and, after 1.5 hours, our fish is ready to eat. Any fish will do, both chilled and frozen (defrost). Prepare a mixture for salting: mix salt, sugar and vodka thoroughly.
Cut the fish into layers, separate from the bones. If the fish is large, then I cut into 3 parts across, and then cut each piece separately, or leave part of the fish for baking. Grate the layers with brine and leave on the table for 1, 5 hours. Any red fish will definitely be ready in 1.5 hours. Salmon, if not completely thawed, then leave it for 2 hours. We like this lightly salted one.
After the specified time, remove the excess salt that remained on the fish. I wash off the salt with cold water. And then I blot it with a paper napkin to remove the water. Then I cut into portions. Cut without skin. That is, we begin to cut to the skin, and then, as it were, we peel off a piece from it. Try it. It's comfortable. The festive fish is ready! Enjoy my dear ones!
