Bread on the festive table is usually not very attractive, but some unusual pastries are very suitable.
I usually have some cottage cheese in the freezer, I cook from it not only casseroles or donuts, but bagels, which are perfect for those who like to eat salads with bread. They turn out to be very tasty, they can just be served with tea.
The basis of the dough is cottage cheese, it should be moderately dry, but not very moist. I add two eggs and one white to the cottage cheese, leave the yolk in order to grease the bagels before baking.
Another important ingredient is cheese, which must be grated with a fine grater. I use two types of flour, wheat and rice, mix them in equal proportions with baking powder. I also add a pinch of Provencal herbs and a little salt.
I knead the dough, they may stick a little to my hands. If the dough is too sticky, you can add one or two tablespoons of wheat flour. Next, I divide the dough into two pieces, and then each piece into six more pieces.
Then I act as shown in the photo below:
I roll each piece of dough into a sausage with my hands and form a bagel.
I put the finished bagels on a baking sheet, grease with yolk mixed with water or milk and sprinkle with sesame seeds or poppy seeds. Chopped pistachios or cashews will be very useful here.
They are baked in the oven at 180 degrees for about 35-40 minutes. Serve chilled.
Ingredients for 12 bagels:
- Curd 400 grams
- Cheese 160 grams
- Eggs 3 pcs
- Rice flour 70 grams
- Wheat flour 70-90 grams
- Baking powder 1 tsp a spoon
- A pinch of salt and provencal herbs
- sesame seeds, poppy seeds, nuts for decoration
