Therefore, if you cook for a large company, then double the ingredients.

Ingredients:
- flour - 200 g
- sugar - 120 g
- butter - 100 ml
- orange juice - 100 ml
- carrots - 1 pc (90 g)
- eggs - 1 pc.
- walnuts - 50 g
- zest from one orange
- baking powder - 1 tsp l.
- salt -1/3 tsp l.
Glaze:
- icing sugar - 4 tbsp. l.
- lemon juice
Decoration:
- cranberry
- orange slices
- almonds
Step by step recipe
1. First, let's prepare a mixture for greasing a cupcake.
Put 1 tablespoon in a bowl. soft butter, pour in 1 tbsp. l. flour and pour in 1 tbsp. l. vegetable oil. Mix everything well until smooth. The mixture is ready, you can store it in a jar in the refrigerator.
2. Lubricate the cupcake with the prepared mixture. This mixture is very convenient to use when baking in any complex forms. It prevents the product from sticking to the walls, and the baked goods come out perfectly from the mold intact.
3. Let's prepare the ingredients for the cake.
Chop 50 g of walnuts with a knife. Walnuts can be substituted for almonds or hazelnuts.
Three fresh carrots on a fine grater. Carrots weighing about 90 g.
4. Remove the zest from one orange with a fine grater. Remove only the orange part.
Cut the orange in half and squeeze the juice out of it. We need 100 ml of freshly squeezed juice.
5. We knead the dough.
Break 1 egg into a bowl, add 120 g of sugar and a third of a teaspoon of salt. Beat everything with a mixer until light foam.
6. Add 100 g of butter at room temperature. We mix.
7. Pour 100 ml of orange juice here. Mix a little again.
8. Pour 200 g of flour, 1 tsp. baking powder and mix until smooth.
9. Pour grated carrots, chopped nuts and orange zest into the resulting dough. We mix everything until smooth, not with a mixer, but with a spatula, since the dough has already become quite thick.
10. Transfer the dough to the prepared muffin dish. I have a cupcake with a volume of 1.5 liters, but a liter will be enough. Distribute the dough in shape using a spatula or spoon.
11. We put everything in the oven preheated to 170 degrees and bake for about 50-60 minutes.
12. We check the readiness with a wooden stick, it should come out dry.
The cupcake has already cooled down, we take it out of the mold and put it on a dish on which we will serve it on the table.
13. Cooking icing sugar.
Pour 4 tbsp into a bowl. l. icing sugar and gradually add lemon juice. Mix with a spoon. Do not pour too much juice at once. Stir and watch the consistency of the glaze. It should be thick enough and not runny.
14. With the finished frosting, immediately grease the top of the cake.
Until the icing has frozen, decorate the cake with cranberries, I have frozen cranberries, almonds and orange slices. Serve the finished cake.
The orange and carrot cake turned out to be very tasty. Pleasant citrus aroma, soft and moist dough texture and slight acidity of the glaze. This is an unforgettable combination. Carrots are not felt in it at all. Keep in mind that the cake comes out small.
