As a child, my mother often bought peanuts in sugar. I loved him very much. But at some point he disappeared from sale.
Recently in a store I came across the same peanuts in caramel. I was delighted and took a pack without looking at the price tag, but in vain. At the checkout I was "pleased" - "From you 260 rubles." I was surprised at this price, but I bought it anyway.
I tried it at home, remembered my childhood and decided that it was imperative to cook it, it was not appropriate to overpay every time for such a cheap dessert. At the end of the article, I will calculate how much I spent on cooking caramelized peanuts.
Step-by-step recipe for how to cook caramel peanuts
I fry the peanuts in advance and peel them.
I send sugar and water to the pan, put it on fire and bring it until the sugar is completely dissolved. I pour in all the peanuts. Reduce heat to medium and sauté with constant stirring.
Over time, the water evaporates and the peanuts are covered with a sugary shell.
As soon as all the water has evaporated, I begin to actively stir the peanuts, as they can burn very easily. After about 3-4 minutes, the sugar shell begins to melt and turn into caramel.
All this time I do not stop and continue to stir. When all the nuts are caramelized, add the butter and stir.
Stir until the oil is absorbed. I transfer it to a huge metal container, I have this bucket for cooling champagne, a basin is perfect. I continue to whisk the peanuts.

Due to constant stirring, the nuts do not stick together and cool down. It is important to bring the peanuts to complete cooling, stirring constantly, then you will not get kozinaki, but individual nuts.
