Hello dear friends! Here's a recipe for paleo hummus without chickpeas. It can be served with falafel, nut crackers, or coconut pita chips.
Ingredients: cauliflower, tahina, 1/2 lemon juice, garlic, ground coriander, olive oil cold pressed -, water, salt, ground black pepper, vegetable oil for baking (I use oil avocado)
Cooking method:
Preheat the oven to 180 degrees and cover the baking sheet with parchment paper.
Divide the cauliflower into inflorescences and place on a baking sheet. Sprinkle with vegetable oil, add salt and pepper to taste. Bake for 35-40 minutes or until tender.
Add baked cauliflower, extra virgin olive oil, tahini, coriander, salt and ground black pepper to taste, a clove of garlic and lemon juice to a blender. We begin to grind and gradually add water. We continue to gradually add water one tablespoon at a time and grind until a homogeneous creamy mass is obtained.
Serve ready-made hummus with vegetables, falafel, can be added as a sauce to salads or with paleo crackers!
