Honey cake in 30 minutes

Ingredients: Butter, Sugar, Honey, Soda, Eggs, Flour, Sour cream 20% (thick thermostat), Powdered sugar, Vanillin, Baking powder

Cooking method:

First, prepare the honey dough. Melt a packet of butter in a small saucepan. Add a glass of sugar and 4 tablespoons of honey. As soon as the mixture starts to boil, add soda and mix well, we have a minimum fire. There is no need to extinguish soda, it will be extinguished with honey.

Stir the mass constantly. As soon as soda is added, abundant foaming begins, the mixture increases in volume several times, this is normal, this is exactly the reaction that should begin. Cook until a dark caramel color of the mass is obtained for about 1-2 minutes. Leave the prepared mass to cool.

Drive three eggs into the mixing bowl. Beat with a whisk until foam forms. Add the caramel mass to the beaten eggs. Add a small pinch of salt (literally on the tip of a knife) and a teaspoon of baking powder. In several steps we introduce sifted flour and knead the dough. The dough should be of a mobile consistency (thin, slightly pouring).

Cover the baking sheet with parchment and divide the dough into 2 parts (you can measure it on a scale). Spread the honey dough on a baking sheet and distribute in an even layer. We bake the cake in an oven preheated to 180 degrees for about 7-8 minutes, until golden brown (time depends on the thickness of the cake).

Cut off the edges and divide the cake into 3-4 rectangles according to the size of your cake dish (you can also cut round cakes, but there will be a lot of cuttings). Lay out the cuts from the cake on a baking sheet and dry in the oven at 180 degrees for about 5-10 minutes, they should brown quite intensely. Let the scraps cool slightly and grind with a blender.

Cooking sour cream: Put sour cream in a bowl (we have a thermostat, the thickest of the one you can buy in the store). Sugar 170 g. grind into icing sugar. Add powdered sugar and a teaspoon of vanilla extract to the sour cream. Mix everything well with a whisk.

You do not need to whip the cream, just stir the ingredients until smooth. If sour cream, after adding powdered sugar, becomes very liquid when whipped, then it must be thickened with a special thickener for sour cream. Sour cream is ready!

Putting the cake: Lay the cake, coat it well with cream and cover with the next cake on top. We continue this way until we have used all the cakes. The top cake and sidewalls are also well lubricated with cream. Sprinkle the whole cake with our sand crumbs.

It is better to put the cake in the refrigerator for a few hours for soaking (we cook in the evening, so we put it away at night). Honey cake with soft cakes and tender sour cream is ready!
