Barley is a type of barley that is widely used in soups, cereals, side dishes and even salads.

More precisely, whole refined barley grains are called pearl barley. In refined form, the grains are very similar to... river pearls. Well, they used to think and see it that way.

Hence the name - pearl barley. After all, once upon a time pearls were called pearls.

Barley was first mentioned in the Bible. As many as 20 times!

For a very long time in Russia, pearl barley and porridge from it were considered a royal dish. It is believed that favorite porridge of Peter I there was just pearl barley porridge, which his wife cooked for him with her own hand.

For the royal table, barley was soaked for a very long time, at least 12 hours. Then they boiled in milk, simmered in the oven and seasoned with heavy cream for serving.

Because of its delicate taste and nutritional value, barley entered the soldiers' menu even under the tsars. But they did not appreciate it, because in field conditions, barley porridge was cooked not like for a tsar.

The soldiers were served porridge tough and not boiled as it should.

For that unsightly appearance and strange taste, the tsarist army gave the barley an unflattering name - "shrapnel".

Hundreds of years later, barley porridge is still called "soldier's" and it has become a part of traditional Russian cuisine. For example, a decent pickle is considered to be cooked only from barley.

We offer you a delicious way of cooking pearl barley, which can be both a side dish for fish or meat, or an independent dish.

Cooking barley with vegetables in a slow cooker  it's simple, inexpensive and delicious!

Ingredients:

  • 1 cup pearl barley
  • 1 carrot
  • 1 head of onion
  • 2.5 cups water
  • vegetable oil
  • salt
  • pepper
  • Bay leaf

How to cook:

1. Spread chopped carrots and onions in oil in a multicooker bowl.

2. Add a handful of frozen peas (you can use canned ones).

3. Rinse 1 glass of pearl barley, pour it into a multicooker over vegetables. You can soak pearl barley for a short time before cooking. For 20-30 minutes.

Did you know that pearl barley contains three times more selenium than rice? And it means that pearl barley, when eaten regularly, makes us prettier and a little younger. And hair, skin, nails, joints, ligaments - everything is improved due to the content of lysine in barley, which takes part in the production of collagen.

4. Pour 2.5 cups of water over the contents of the multicooker. Salt, pepper, bay leaves and other spices to taste.

5. Set the "Pilaf" mode, close the lid and now you just have to wait. How will it squeak  ready!

Stir the dish and serve.
