You can cook many dishes from pork knuckle for all occasions. I propose a recipe for baked shank in soy-mustard marinade.

Ingredients: pork knuckle, soy sauce, mustard, garlic, bay leaf

Cooking method:

Let's start preparing the shank by making the marinade. Combine the mustard and soy sauce in a bowl and mix well. If the soy sauce isn't salty enough, add salt to your liking. Cut the garlic into plates, make cuts in the shank and stuff it with garlic. We take a baking dish, cover it with foil, put the shank with garlic on the foil. Lubricate the shank on all sides with soy-mustard marinade.

Put a few bay leaves on top, wrap the knuckle tightly in foil and send it to marinate in the refrigerator for 3-4 hours, you can overnight. I take the pickled knuckle out of the refrigerator, make several punctures in the foil so that the steam escapes and send it to the oven. I bake a shank per 1 kg for 1.5 hours of baking time, I will bake a shank weighing 1.4 kg for 2 hours. 15 minutes before the end of baking, I will remove the foil so that the shank is browned.
