Lemon muffins. I bake something delicious every day for tea, but these muffins are the most common. The difference between these muffins and ordinary muffins is that they are moist, fragrant and slightly sour. Lovers of sweets will definitely appreciate it, and they can not be prepared any easier.

Recipe:

Lemon zest - 1 piece

lemon juice -50ml

water -50 ml

butter -100g

sugar -100g per dough

and 100 g for syrup

eggs -2pcs

soda -1 / 2 tsp.

salt -1 / 3 tsp

flour -120g

COOKING METHOD

Wash the lemon well and remove the zest, now squeeze the juice from the lemon, we need 50 ml, so look you may need 2 lemons, it all depends on the size.

Dilute with water 1 to 1, i.e. I add 50 ml of water to 50 ml of lemon juice.

Put 100 grams of soft butter in a bowl, add 100 grams of sugar, and mix the butter and sugar. add half the zest of 1 lemon, break 2 eggs, mix, add 1/3 tsp. salt. Let's measure out 120 grams of flour, add half a tsp. soda and mix. Now add to the dough and mix. Pour in 2 tbsp. diluted lemon juice, mix again, this should be the dough.

We take the muffin tins, grease the dough with butter, fill the tins up to half, as the muffins increase in volume. We put in a preheated oven and bake at 180 degrees for 15-20 minutes, orient yourself according to readiness, readiness can be checked with a wooden skewer.

While the muffins are baking, prepare the syrup. Put 100 grams of sugar in a saucepan, pour in diluted lemon juice, put the second half of the zest, put on fire and boil from the moment of boiling for 3 minutes.

We take out the finished muffins and pour hot lemon syrup while they are hot.

Let it cool down and you can start at the tasting. I want to note that they turn out to be super soft and airy, but how delicious they are you can taste the taste by cooking them yourself, especially as you made sure they are cooked twice three.
