There are, of course, many filling options. Sweet, cottage cheese, meat, mushroom, vegetable.. I really wanted something livery, so I made a filling of chicken liver and buckwheat, how delicious it turned out π€€π€€π²ππ, I hasten to share with you ππ.
Ingredients: chicken liver, large onion, buckwheat, vegetable oil, butter, salt, pepper, For the dough: egg, milk, flour, salt, sugar, vegetable oil, baking powder, water to the desired consistency
Cooking method:
First, let's prepare the dough. Each housewife has her own recipe, you can cook any pancakes - on water, kefir, whey, I have 50/50. I beat an egg into a bowl, add salt, sugar, milk, shake it, add all the flour, mix it, a rather thick dough is obtained, and now I dilute it with water to the consistency I need. With this kneading, no lumps are formed. It remains to add oil and baking powder. Let the dough rest while we work on the filling.
We wash the buckwheat, send it to boil. In a frying pan with heated vegetable oil, send the chopped onion. After a couple of minutes, put the washed liver, cleaned of everything superfluous, to the onion.
Fry, stirring occasionally. Salt, pepper to taste, I also added 1/2 tsp each. sugar and dried sage, but this is optional)). To test doneness, break open a piece of liver, it should be pink but without blood. At the end of frying, add butter - you canβt do without itβοΈ !!
We shift the liver into a suitable container, interrupt with a blender until smooth (you can pass through a meat grinder). Add buckwheat cooked by this time. By the way, you can replace it with rice or mashed potatoes, or you can not add it at all, but with it, it seems to me, the texture is tastier and more interesting)).
We bake pancakes. I got 20 pcs.
We stuff. For each pancake, lay out 1 tbsp. with a slide of filling and wrap it with an envelope or a roll, as you like.
You can leave them like this. But!!! I highly recommend lightly frying them in butter, they will become even tastier and more aromatic)).
