All ingredients are at room temperature, including jam.

Cooking method:
Opara: in milk (38ºС) dissolved yeast with 1 tsp. sugar (from gen. count), added 4 tbsp. flour (from gen. count), mixed until smooth, tightened with a film, removed to the rise.
I mixed the eggs, salt, sugar, vanilla sugar, butter, combined with the finished dough, mixed until smooth. I added flour (not all at once, I leave a couple of spoons). Mixed with a spoon. She poured the remaining flour on the table, kneaded the dough (5-10 minutes). It took only 460 g of flour.
The dough was placed in a container greased with vegetable oil, removed under the film to rise in a warm place.
I did a punch down on the dough, and put it back on the rise.
I rolled up the risen dough into a roll, divided it into 12 parts. I rolled each one into a ball, left it under the film for 7-10 minutes. Next, I rounded each ball again, put it on a lined baking sheet, left it under the film to rise (= 20 minutes).
Then, in each bun, in the middle, I made a recess (dip your finger / cap in flour) to the very bottom, while making the recess a little wider. Repeat this action one more time.
Crumb: I rubbed the plum oil with sugar with a spoon and mixed with flour and until crumbly.
Next, smeared the buns with yolk + 2 tsp. water, immediately sprinkled with crumbs. After, with the help of a pastry bag, I filled the middle with jam.
Baked at t 180º C = 20 min. Watch your oven! Good appetite!
