Kefir cheese can be prepared at home by any housewife. It belongs to the category of soft curd cheeses and is made from frozen kefir, which is the easiest way. Cooking method:
We buy kefir in the store and clean it for the night!!! into the freezer (you can take kefir with a volume of 1 liter or 2 packs of 0.5 ml each), then, accordingly, more curd mass will be obtained at the output.
In the morning we make a special design, for this we take a deep bowl, a sieve and gauze. We set the sieve over a bowl, cover the sieve with gauze in 2a layers. We take out kefir from the freezer, cut the bag with scissors and put the frozen blank on gauze, cover with the free end of gauze and in this form for 6 hours at room temperature let our kefir. Then for 36-48 hours we put this design in the refrigerator. During this time, there will be a detachment of the curd mass and whey.
If desired, at the end of the process for 1 hour, you can put oppression on gauze, then the mass will give maximum moisture and the cheese will be much drier. In any case, it turns out delicious curd cheese, which we transfer to a container with a lid and whey. We drain the whey into a jar, it will come in handy for baking the most delicious pancakes or pancakes. I have attached a link to how to make pancakes.
And now, if desired, you can add a pinch of salt and finely chopped dill, you get cheese with herbs. It can be used on sandwiches or bruschetta. You can make a sweet curd mass by adding powdered sugar or honey, berries, fruits, jam, but this is for the sweet tooth))).
