Minced salmon cutlets

Ingredients: salmon (minced meat or fillet), flour (semolina), potatoes, chicken egg (small), vegetable oil, green onion, ground black pepper, salt, For sauce: sorrel, parsley, cream 20%

Cooking method:

Potatoes in a peel pre-cook or bake in the oven. Peel the potatoes from the skin and mash with a special tool until mashed.

Crack an egg into the puree. Finely chop the onion feathers. Add to potatoes.

Check raw salmon or other fish fillet for bones by removing them, pass the fish fillet through a meat grinder or chop in a blender. You can use ready minced salmon. If boiled pulp, then mash with a fork. Canned food can be added immediately from the jar, after draining the liquid.

Mix all ingredients until smooth and taste. Only then salt and pepper.

With wet hands form small patties. If the mass does not hold together, add more flour or put the liquid mass with a spoon into a pan with heated sunflower oil, flattening the meatballs a little during the frying process.

Fry on both sides for 5-8 minutes, until golden brown. Round patties take longer to cook, and there is a chance that without stewing they will remain raw inside. Therefore, you can cover the pan with a lid and simmer a little.

Place patties on paper towels to get rid of excess fat.

Any salad, pasta or rice will do as a side dish. You will need gravy or sauce. Sorrel sauce goes very well with salmon cutlets. It turns out very tasty!

To prepare sorrel sauce: wash thoroughly and coarsely chop the herbs.

Boil cream in a saucepan. Throw in chopped sorrel and parsley. Stir, wait for a boil, and remove from heat.

Puree the sauce with an immersion blender. Taste and season with salt if desired.

Serve separately in a gravy boat and pour over cutlets just before serving. The sauce is delicious both hot and cold. After cooling, the sauce thickens, so before serving, the sauce should be heated over low heat, stirring constantly.

Sorrel sauce can be replaced with another sauce (creamy and sour cream). Tomato will not work, but this is a matter of your taste. Bon Appetit!
