Ingredients: berry puree, protein, water, agar-agar, sugar, vanillin
Cooking method:
Boil any berries with half the sugar. Boil well. Rub through a sieve. Cool down. To get 130 g of puree, you need to take ~ 300 g of berries. I have blackcurrant and blackberry.
Next, beat the cold puree (with a mixer) with protein at high speed. Add vanilla. The mass should lighten and increase in volume. Whipping time~10 min.
While the mixer is running, mix water, agar and the rest of the sugar in a saucepan. Bring to a boil and cook for seven minutes, until a thin thread. Slowly pour the non-boiling agar into the berry mass, continuing to whisk. Beat until the mixer bowl is warm. We take bags with nozzles and shift the mass. Place quickly on parchment or in chocolate bowls.
We leave about 12 hours for the marshmallow to dry. Roll in powdered sugar...and... enjoy!
