Ingredients: Duck breast, Salt, Ground red pepper, Zira, Thyme, Rosemary, Basil, Coriander, Honey, Garlic, Soy sauce, Mustard, Dijon mustard, Vegetable oil
Cooking method:
Since the duck is cooked for quite a long time, I first stewed it a little in boiling water for several minutes, after making cuts on the skin.
We are preparing the marinade. In a mortar, grind to a homogeneous mixture of spices: salt, ground red pepper, cumin, rosemary, thyme, coriander, basil. In a bowl, mix a little melted or liquid honey, soy sauce, garlic pressed through a press, two types of mustard - regular and Dijon. All ingredients according to your taste. Pour in the spice mixture.
We put the breasts in the marinade, roll them carefully and leave to marinate for 1-1.5 hours.
Heat the vegetable oil in a frying pan and fry the breasts on both sides, starting with the skin up. Until golden brown, being careful not to burn. Readiness can be checked with a knife, clear juice should stand out.
Serve with any side dish (I had buckwheat noodles).
