Preparing such a carrot cake is not difficult. All stages of preparation are simple and everyone can handle them. This Orange Cloud cake is perfect for any holiday table. And it turns out quite a lot and enough for a large company.

Ingredients:

Biscuit:

  • flour - 260 g
  • raw carrots - 250 g
  • sugar - 150 g
  • eggs - 3 pcs.
  • vegetable oil - 120 ml
  • walnuts - 60 g
  • apple - 1/2 pc.
  • soda - 1 tsp l.
  • ground cinnamon - 1 tsp l.
  • baking powder - 1/2 tsp. l.
  • salt - 1 pinch

Butter cream:

  • cream 33% - 400 ml
  • cream cheese (Philadelphia) - 250 g
  • sugar - 3 tbsp. l.

Carrot Apple Pudding:

  • carrot-apple juice - 500 ml
  • flour - 30 g
  • starch - 20 g
  • sugar - 1 tbsp. l.
  • walnuts - 2-3 pcs.

Step by step recipe

Cooking carrot cake

1. Let's make the carrot cake first.
250 g carrots three on a fine grater.
60 g of peeled walnuts, cut into small pieces with a knife.

2. Take half a medium-sized apple and peel it from the skin and core. Three apples on a coarse grater.

3. Pour 260 g of flour into a bowl, salt with a pinch of salt, add 0.5 tsp. l. baking powder, 1 tsp. l. soda and 1 tsp. l. cinnamon. We mix everything.

4. Break three eggs into a bowl. We begin to beat with a mixer and gradually pour 150 g of sugar. Whisk the eggs and sugar for a few minutes until stiff.

5. To the beaten eggs, gradually pour 120 ml of odorless vegetable oil. Beat with a mixer.

6. Here we add grated carrots and an apple. Mix everything with a spatula.

7. In the dough, add the prepared flour mixture in two approaches, sifting it through a sieve. Each time, gently mix everything with a spatula.

8. At the end, add chopped nuts and mix again.

9. Transfer the finished dough into a 23 cm square mold. Line the bottom of the mold with parchment paper. Spread the dough evenly throughout the mold.

10. We put everything in the oven preheated to 170 degrees. Bake for approximately 35-40 minutes.

11. The biscuit is cold. We pass the knife along the sides of the form and take it out. Cut off the top of the biscuit so that it becomes more even. Biscuit cut into two approximately identical parts.

Cooking cream

12. Pour 400 ml of necessarily cold cream with a fat content of at least 30% into a bowl. I have cream with a fat content of 33%. Here we put 250 g of cold cream cheese and pour 3 tbsp. l. Sahara.
First, beat everything at a low mixer speed. Gradually increase the mixer speed to maximum. Whip the cream with the cheese until fluffy.

Stacking the cake

13. Place the first cake on the bottom of the mold. On the sides, between the form and the cake, we put an acetate film. If there is no acetate film, then you can collect the cake without it.

14. Spread all of the buttercream over the crust. Distribute it evenly throughout the cake.

15. We put the second cake and press it a little to the cream.
We put the cake in the refrigerator.

Cooking pudding

16. Pour 0.5 l of carrot-apple juice into a saucepan. Pour 30 g of flour, 20 g of starch and 1 tbsp. l. Sahara. Mix everything with a whisk and put on fire.

17. Cook over medium heat, stirring constantly. When the mixture boils and bubbles start to form, cook for 1 more minute and remove from heat.

18. Immediately, add 100 g of butter to the hot pudding. We mix everything until smooth.

19. Without waiting for cooling, still hot, pour the pudding on top of the prepared cake. Distribute it evenly over the entire surface. When the carrot pudding has cooled to room temperature, put everything in the refrigerator for about 4 hours, I left it overnight.

20. We take out the finished cake from the refrigerator and take it out of the mold. We rearrange the cake on a dish on which we will serve it on the table. Remove the acetate film.
Cut the cake into portions.

21. Finely chop two or three walnuts with a knife. Decorate with chopped nuts on top of each piece of cake.

Cake Orange Cloud turned out very tasty and beautiful. Fragrant carrot biscuit with nuts, delicate butter cream and bright carrot pudding are perfectly combined with each other and create a unique exquisite taste. There is no carrot in the cake at all. Anyone can make this cake.
