Ingredients:
- milk - 1 l
- kefir - 1 l
- eggs - 6 pcs.
- salt - 4 tsp. l.
- dill - 1 bunch
- ground red pepper (hot) - 1/3 tsp. l.
Step by step recipe
1. Pour 1 liter of milk into a heavy bottomed saucepan. Here we pour 1 liter of kefir to the milk. Milk and kefir can be taken with any fat content. We put this mixture on the stove over medium heat.
2. Break 6 eggs into a separate bowl. We pour 4 hours. l. salt. Mix everything with a whisk until smooth.
3. Pour the prepared eggs into the still warm milk mixture in a thin stream, while constantly stirring. Cook the cheese over low heat, stirring occasionally so that it does not burn to the bottom.
4. While the cheese is cooking, chop a small bunch of dill.
5. At about 60 degrees curd lumps will begin to appear. Bring all this mixture to a boil and after boiling, cook for about 1 minute more and turn off the heat.
Pour chopped dill and ⅓ tsp into the pan. ground red pepper. We mix everything.
6. Let's prepare the dishes for the cheese.
We put a sieve on a bowl and put gauze folded in 2 times on it.
Now pour the still hot curd mixture onto the cheesecloth.
7. Level the cheese on top with a spoon and cover with cheesecloth.
We drain the whey into a separate container, you don’t need to pour it out, you can cook a very tasty mannik on it.
8. We put a plate on the cheese, and a load on it. I put down a heavy marble mortar. You can also put a jar of water.
We put everything in the refrigerator for about 8 hours, so that the glass is excess liquid.
9. All the whey is glass, we remove the load and take out the homemade cheese from the gauze.
From this amount of ingredients, 480 g of cheese was obtained.
