Apple filling, the most relevant in the autumn-winter period, and besides, it is budget-friendly. Today I am baking a pie with a lot of apples and the addition of nut crumbs, and the filling is cottage cheese and apples again. It turns out very tasty. I flavored the apples with a honey-lemon mixture, you can add a spoonful of rum or cognac, and for a more exotic taste - a little ginger. Ingredients: Dough: apple, honey, lemon juice, softened butter, sugar, egg, zest of one lemon, flour, baking powder, salt, ground walnut (you can take almonds), Cottage cheese filling: cottage cheese, sour cream, sugar, yolk, starch (corn or potato), Apple filling: apple (1.5 was enough for me), butter, Sahara
Cooking method:
Peel the apples, remove the core and cut into large cubes.
Mix honey melted in a water bath with lemon juice. Pour over prepared apples with three tablespoons of this mixture, mix and set aside.
Beat softened butter with sugar, add eggs one at a time, continuing to beat.
Add lemon zest, flour, baking powder, salt, ground walnuts (optional - ground almonds), mix. It turns out a thick dough.
Add prepared apples and mix well again.
Line the bottom of a mold with a diameter of 24 cm with parchment and grease the bottom and sides of the mold with vegetable oil. Lay out the dough and smooth it out.
Add sour cream, sugar, yolk, starch to cottage cheese and beat with a blender.
Put the curd filling on the dough. Smooth out.
Remove the core of two apples and cut into circles, 7-10 mm thick and put on top of the curd layer.
Brush the apples with the remaining honey-lemon mixture and bake in the oven for 30 minutes at 180 degrees.
Take the pie out of the oven. Brush the top with melted butter and sprinkle with sugar. Send to the oven for another 30 minutes.
Allow the finished pie to cool and serve.
