Chocolate cake with prunes

Ingredients:

Biscuit:

  • sugar - 150 g
  • eggs - 4 pcs.
  • flour - 110 g
  • cocoa - 15 g
  • baking powder for dough - 1.5 tsp. l.

Custard:

  • milk - 500 ml
  • butter - 250 g
  • yolks - 2 pcs.
  • sugar - 4 tbsp. l.
  • flour - 3 tbsp. l.
  • starch - 2 tbsp. l.
  • vanilla sugar - 15 g
  • dried prunes - 400 g

Glaze:

  • milk chocolate (black) - 100 g
  • butter - 70 g

Step by step cooking recipe:

  1. Let's make a biscuit first. Separate the eggs into yolk and white. Beat the whites with a mixer gradually adding 150 g of sugar, until a fluffy stable foam. Add egg yolks one at a time to this mass, constantly whisking everything with a mixer.
  2. Pour 110 g of flour, 15 g of cocoa powder and 1.5 tsp into a sieve. baking powder. Sift the dry mixture into the egg mass in 2-3 approaches, each time gently knead with a spatula or spoon. The dough should not fall and should come out airy and light.
  3. We transfer the finished dough into a form covered with parchment paper and evenly distribute it throughout the form. The size of my form is 26 by 26 cm. We put the dough in the oven preheated to 180 degrees. and bake for about 15-20 minutes.
  4. Now let's prepare the custard. Pour 0.5 liters of milk into a saucepan and put on fire.
  5. While the milk is boiling, prepare the rest of the cream. Pour 2 yolks into a bowl and start beating with a mixer. Gradually add sugar and vanilla sugar to the yolks and beat until whitened and the mass increases in volume. Pour starch (potato or corn) into the yolk mixture and add 3 tbsp. flour. We mix everything with a mixer.
  6. The milk has already boiled, gradually pour it into the prepared mass and mix until smooth.
  7. Pour the resulting mixture back into the saucepan and put on the stove. Cook the cream over low heat, stirring constantly so that during the cooking process it does not burn to the bottom. We cook the cream until it thickens, it took me 2.5 minutes. We cover the finished cream with a lid and leave it at room temperature so that it cools completely.
  8. The custard base has cooled, we continue to prepare the cream. Beat butter at room temperature with a mixer until whitening and increasing in volume. In the whipped butter, add one tablespoon of the well-cooled custard base, beating the cream well each time. If you add the entire custard base to the oil at once, then the cream will turn out not so lush and airy.
  9. Preparing syrup for soaking biscuit.
Pour half a glass of water into a saucepan and pour half a glass of sugar. We put everything on the stove. Bring to a boil and boil for one minute. Let the syrup cool down.
  10. Pour 50 g of cognac into the cooled syrup and mix. Cognac can be omitted if desired.
  11. Remove the top crust from the baked and cooled biscuit. We soak the biscuit very well with sugar syrup. We spread the prepared custard on the biscuit and level it over the entire surface.
  12. Dried prunes must first be washed and poured with boiling water for 10-15 minutes. Drain water from prunes and pat dry with paper towels. Cut the prepared prunes into smaller pieces and spread them evenly on top of the cream.
  13. Cooking chocolate icing for the cake. Put 100 g of dark or milk chocolate broken into pieces in a bowl and add 70 g of butter to it. We put everything in a water bath and drown from time to time stirring. Be careful not to overheat the chocolate and make sure that no water or condensation gets into it. When most of the chocolate has melted, remove it from the water bath and continue stirring until the chocolate and butter are completely melted.
  14. We let the chocolate icing cool to about 25 degrees so that it is not very pouring. Pour the slightly cooled icing on top of the cake with a spoon.
We put everything in the refrigerator for at least 2 hours, so that everything is well frozen and stabilized.
  15. Cut the cooled cake into portioned pieces and serve.
Cake with prunes turned out very tasty, appetizing and beautiful.
