Tender meat in tomato sauce with potatoes according to a traditional Greek recipe.
Ingredients: goat meat, red onion, garlic, oregano, salt, tomatoes in their own juice, dry white wine, olive oil, hot water, large potatoes
Cooking method:
Place a whole peeled onion and two cloves of garlic in a heated heavy-bottomed pan with olive oil. Fry for 30 seconds and put the pieces of meat in the pan. Fry until golden brown on both sides.
Remove the meat, onion and garlic from the pan in a separate container, and put in the oil in which the meat was fried oregano, salt, and tomatoes. Fry the tomatoes for about half a minute, stirring constantly and put the meat and onion with garlic in the pan.
Add white wine to the meat and let it evaporate. Stir all the contents of the pan, add hot water so that it does not completely cover the meat. Cover halfway, reduce heat to medium and simmer for 1 hour 10 minutes.
Next, add the peeled potatoes, cut into large cubes and simmer for another 20 minutes. Add more hot water to the pot if needed. Once the potatoes are ready, the meat can be served. BON APPETIT! 😋
