Ingredients: wheat flour, sugar, apricot jam (or peach, or other neutral), applesauce (from heat-treated apples), freshly squeezed orange juice, coconut oil (melted), baking soda, lemon juice, raisins (optional), orange zest (optional) wish)
Cooking method:
Sift flour with baking soda into a large bowl.
I want to mention applesauce: in this recipe, I used ready-made homemade in a jar. You can buy baby food. Or bake, or stew apples and beat them. Also about jam: it also needs to be mashed. I have peach jam, I whipped it with a submersible blender. Apricot, peach, pear jam is suitable (berry will not work).
In another container, mix well all other ingredients (except raisins and zest). If the liquid mixture thickens a little (this is due to coconut oil), it needs to be warmed up a little, but not much, only until the mass is homogeneous (it thickened a little for me, there were white lumps, and I heated the mass in a wide frying pan).
Pour the liquid mixture into the dry mixture and mix well. The dough is thick, dense and porous.
Stir in raisins and zest, if using.
Move the dough into the mold.
Bake in a preheated oven at 170°C. I recommend baking in small muffin tins, you can use paper ones. Then the baking time will be approximately 25 minutes. If you bake one cupcake, then about 45 minutes, look at readiness. (!) Note: it is better to fill the form with dough halfway, as the dough will rise well.
