Therefore, I decided to cook the second casserole in a double boiler. The result was just great! Ingredients: vanilla sugar, milk, salt, rice porridge, warm butter, eggs, sugar, cottage cheese, cinnamon, raisins or dried cherries soaked in juice, lemon zest of 1 lemon, I also sprinkle breadcrumbs breadcrumbs

Preparation for option 1 In a saucepan, bring milk, a pinch of salt, grated lemon zest and vanilla sugar to a boil. Then add rice and bring to a boil again. After boiling, remove the pan from the stove, cover with a lid and put the rice in a cold oven to swell for about 40 minutes For option 2 - I boiled rice in a double boiler until al dente (it doesn’t matter, you can cook fine)
Lubricate the baking dish with 20 grams of butter. Preheat oven to (top/bottom heat: 180°C). Stir cottage cheese, eggs, 40 g butter, raisins, sugar into rice, place in a greased baking dish.
Bake on the middle rack for about 40 minutes. Remove from oven, sprinkle with cinnamon and serve immediately.
For this casserole, I took milk rice, which cooks much longer than "normal" rice and boils soft, which, as I determined, is much tastier for cereals and casseroles.

And with my beloved Rote Grütze, even a hot, even a cold casserole "for a sweet soul"! )) I heat the casserole very simply: I take a small frying pan with a lid, pour a little water, close the lid and put on fire, the water has boiled away, the casserole has warmed up and is ready for use!
