Hello friends! On my channel there is a recipe for a simple puff pastry and I was often asked what can be cooked from it? Today I will show you how to quickly and easily make delicious puff pastry out of it.

PREPARING Puff Cookies

I need a simple puff pastry without yeast, a detailed recipe in the video below ⬇

First you need to knead the usual yeast-free dough.

I take 200 ml of very cold water (you can even throw in ice), add 8 g of salt, 360 g of flour and knead everything until smooth.

When the dough becomes homogeneous, add cold butter to it. I mix everything for one minute.

I put the dough on cling film, cover it with the same film on top, roll it into rectangles and put it in the refrigerator for 30-50 minutes. The butter needs to stabilize so that the dough can be rolled out. Sometimes I leave it overnight.

As a result, it becomes more dense and you can make puff pastry from it. It is advisable to do this quickly.

The faster you unfold, the more folds you can do at one time. Periodically lift the dough and add flour, do not let it stick.

Folds are made simple - once two in three layers.

I immediately unfold, sprinkle the table and roll it along.

Watch carefully, if the butter begins to float, the dough must be removed in the refrigerator.

Usually I manage to make four folds.

In this version of the dough, I increased the water a little and reduced the butter a little. This will make it easier to roll out the puff pastry.

After 4 folds, I put the dough in the fridge for half an hour.

After half an hour, I roll out the dough and make two more simple folds.

After that, I put the dough in the refrigerator for at least an hour, preferably two, or until the next day. Before that, you can slightly cut the corners of the puff pastry so that it does not shrink.

COOKIE FORMING

Take the dough out of the fridge and roll it out to about 1cm thick.

After that, you can mold cookies. I got a square 32 by 32 cm. I cut off the edges.

I pour sugar on the table, you can add a pinch of salt, who loves the game of tastes.

I also generously sprinkle the top (inner) side. I rolled out the dough to about 5mm thick.

I fold the dough from the edges to the center, leaving a gap between them.

Then I roll the rolls from the edges inward to each other.

Then the whole "sausage" can be rolled a little in sugar. I will put this roll in the freezer for half an hour.

COOKIE FORMING

By this time, your oven should be preheated to 210-220°C without convection.

I take the roll out of the refrigerator and cut the ears.

The rest of the dough I will freeze until the next baking.

Sliced ​​cookies can be sprinkled with powdered sugar before baking and sent to the oven.

My "ears" spent 16 minutes in the oven.
