Pork fillet with vegetables in honey glaze

Ingredients: pork fillet, medium onions, large carrots, garlic, honey, ground sumac, bay leaves, Juice of one lemon, sherry, Salt, Ground black pepper, Olive oil, butter

Cooking method:

Grate the fillet with salt and pepper, brush with olive oil, put in a baking dish, pour over sherry and bake in an oven preheated to 180’C, bake for 30 minutes, periodically pouring over the released juice.

Remove the meat from the oven, grease with honey, sprinkle with ground sumac, add bay leaf and garlic cloves cut into halves. Put in the oven and bake for another 30 minutes, basting occasionally with juice.

Peel the onion and carrot, cut the onion into 4 parts, cut the carrot into slices obliquely.

Remove the meat from the oven, put the vegetables in the mold, grease the meat and vegetables with honey again, pour over the lemon juice, put pieces of butter on top of vegetables and send everything to the oven for 30 minutes, also periodically sprinkle with juice.

Serve hot, cutting the meat into slices.
