#kukpad4 #pie This pie has three delicious layers. The basis of the pie is a crumbly shortcrust pastry. In the middle of the pie there is a delicate curd layer with lemon flavor and aroma. On top of the cake is an airy protein soufflé. Each of the three layers contains the zest and (or) juice of a lemon, so the cake is incredibly fragrant. I have never tasted a more delicious and tender cottage cheese pie!
Ingredients: For the dough: flour, baking powder, vanillin or a bag of vanilla sugar, salt, butter, egg yolks, sugar, zest from half a lemon, lemon juice, For the curd layer:, cottage cheese, a spoonful of semolina, if the cottage cheese is very wet, sugar, egg, zest from half a lemon, For the protein layer:, egg whites, lemon juice, Sahara
Cooking method:
Pour salt, sugar, vanillin or vanilla sugar to the egg yolks and stir with a fork, spoon or whisk (as convenient) until the ingredients are combined. Add soft butter, stir until smooth. Pour lemon juice and zest into the resulting mass. We mix.
Add half of the prepared flour and baking powder. Knead the dough first with a whisk. Then, gradually adding the remaining flour, continue to knead the dough with your hands. It turns out soft, not sticky, elastic dough.
For baking the pie, I took a square detachable form with a side of 28 cm. The bottom was lined with baking paper, the sides were lightly oiled. We tear off small pieces from the dough, lay it on the bottom of the mold and distribute it in an even layer, pressing and lightly tamping the dough. Do not forget to make low sides from the dough. We go over the entire surface of the dough with a fork, making frequent punctures. The base for the pie is ready. Let's put it aside for now.
We make a curd filling for a pie. In a bowl, combine cottage cheese, sugar, egg, lemon zest. My cottage cheese is very wet, so I added 1 tbsp. a spoonful of semolina. First, mix everything, and then pierce with a blender until a homogeneous, smooth mass.
We spread the curd filling on top of the base of the pie, distribute it in an even layer and send it to the oven preheated to 180 degrees for 30 minutes until the curd layer sets.
3-4 minutes before readiness, prepare the protein soufflé. Add the lemon juice to the whites and, gradually increasing the speed of the mixer, beat until soft peaks. Then, gradually adding sugar, beat the egg whites until stiff peaks. Sugar should be completely dissolved.
We take out the form from the oven. By this time, the curd mass has already become quite dense. From above we distribute the protein mass, level it and make peculiar patterns with a fork, spoon or something else.
We return the cake to the oven. Bake for another 10-12 minutes, until a light caramel crust forms on top.
Remove the pie from the oven, cool on a wire rack and transfer to a serving platter. Cut into pieces and call everyone to the table!
