Ingredients: large eggplant, minced meat, carrot, onion, tomato, cheese, Salt, pepper, favorite seasoning, Vegetable oil for frying
Cooking method:
Wash eggplant, cut in half. Scoop out the pulp with a tablespoon. Salt the resulting boats and leave for 10 minutes
Grate carrots on a small grater. Onion cut into small cubes. Cut the eggplant center into cubes and season with salt. Cut the tomato finely
Fry minced meat in a small amount of oil. When liquid evaporates, add onions and carrots. Give until ready. At the end, add the tomato. Salt, pepper, put in a bowl.
Separately fry the eggplant pulp
Remove the juice from the eggplant boats with a paper towel. Lubricate with vegetable oil and put in the oven for 15 minutes at 180 degrees.
Mix eggplant pulp with minced meat and vegetables. Remove the boats from the oven, fill them with stuffing. Sprinkle grated cheese on top. If desired, you can grease with mayonnaise.
