Agree, it's nice if guests come to you, and you serve a dessert of your own preparation for tea. Today I made marshmallows from apricot and apple puree with poppy seeds. I added poppy, too small, next time I will add more.
Ingredients: In the mixer bowl:, - protein, - sugar, lemons, Syrup:, - sugar (I have 125 g - sugar + 50 g - glucose syrup), - water, - agar, strength 900, - any puree into syrup (I have 100 g - apricot puree + 30 g - from apples) - poppy
Cooking method:
Pour the whites into the mixer bowl, add citric acid and start beating at medium speed until foam appears. Pour sugar in 3-4 doses. Beat until stable peaks. Pour water into a saucepan with a thick bottom, add sugar, agar, glucose syrup and mashed potatoes. We put the syrup on medium heat, and when large bubbles appear, cook until t110 * C.
Pour the syrup into the protein in a thin stream, so that it does not get on the whisk and on the walls of the bowl. Add poppy. Beat for 1 more minute. We shift the mass into a pastry bag with a nozzle and deposit marshmallows on baking paper. We do it quickly, as the mass quickly stabilizes. We leave marshmallows for the night. Then we connect the two halves and sprinkle with powdered sugar. Cook with love and bon appetit!!!
