German Kuchen with Streusel

Ingredients: For the dough:, Warm milk, Dry yeast, Egg, Butter, Flour, Sugar, Salt, Vegetable oil, For spreading (option 1):, Sour cream 20%, Egg, Sugar, Soda, Flour, For spreading (option 2):, Apple jam (plum, apricot ...), For sprinkling (streusel):, Margarine or butter, Flour, Sugar

Cooking method:

To make the dough rise faster, first start the dough: mix half of the indicated norm of milk with a spoonful of sugar and 3 tablespoons of flour. Mix thoroughly so that there are no lumps. We cover the bowl (glass) with the yeast mixture with a film, wrap it with a towel and put it in a warm place for 15 minutes. During this time, the yeast will be covered with a fluffy cap.

In a large bowl, mix the remaining milk and egg. Add brew and stir. In the resulting mixture, sift half the flour, add melted butter. Stir and gradually add the rest of the flour.

We knead the dough. At the end, add vegetable oil and knead the dough thoroughly until it becomes elastic and soft. Leave the dough for 1 hour in a warm place, covered with cling film.

After an hour, the dough will double in size. As soon as this happens, punch down the dough and put it back in a warm place for another hour. Here is such an airy, lush dough!

Prepare the topping (streusel). Combine all the ingredients for the topping, rub them with your fingers until an oil crumb is formed. If the crumb does not work out, add a little flour, and if the crumb turns out to be very small, add a little butter.

If you need a large, uniform crumb, then blind the formed streusel into a lump (work quickly and with cold hands), wrap in cling film and send to the freezer. Then grate it on a grater. Usually the crumb is quite large.

Lay the dough out on a floured board. Form a loaf. Sprinkle flour on top of the cake (the dough is very tender and is not suitable for rolling with a rolling pin). Line a baking sheet with parchment, place the dough on the parchment and flatten it with your hands into a layer, about 1 cm thick.

The size of my pan is 30x40 cm. The layer of dough must be pricked with a fork.

Prepare products for sour cream spread. Mix all the ingredients, adding flour last. Spread generously with sour cream spread on the pastry sheet. I used apple cider as a spread.

Sprinkle the cake with streusel just before sending it to the oven. We put the baking sheet with the pie first in a slightly warm oven (50 degrees) for 15 minutes. Next, increase the temperature to 190 degrees. Bake the cake for 25-30 minutes.

Let the cake cool and cut. The cake is soft, with crispy streusel crumbs. Happy tea!
