A delicious combination of fried eggplant, cherry tomatoes, curd cheese, be sure to try this salad, very tasty!
Ingredients: medium eggplant, cherry tomatoes, red onion, curd cheese (fetaxes, feta cheese), Lettuce leaves, Olive oil, Balsamic vinegar, Ground black pepper, Flour or corn starch, salt
Cooking method:
First, wash and cut the eggplant into cubes and soak it in salt water to remove bitterness. Next, drain the water, squeeze the eggplant lightly. Roll in flour (I did not have starch) and fry in a preheated pan in vegetable oil until golden brown and soft eggplant, on all sides. Place on paper towel to drain excess fat.
My lettuce leaves, cherry tomatoes. Randomly cut lettuce, cherry tomatoes in half, onion in half rings. I used soft cottage cheese, put it in pieces with a spoon.
We make refueling: 2 tbsp. spoons of olive oil, 1 tbsp. a spoonful of balsamic vinegar, ground black pepper to taste. Salt to taste.
